Es un pastel francés que contiene almendra molida; un pastel muy suave y jugoso. En las pastelerías que guardan su nombre tradicional todavía lo podéis encontrar como «visitandine».
Curiosa la historia de este pastel con forma de «lingotes de oro»; cuentan que un pastelero tenía su local cerca de la «bolsa de comercio» y comenzó a realizar este pastel con esta forma.
Ingredientes
- 165 gr azúcar lustre
- 60 gr polvo almendras
- 15 gr miel
- 150 gr claras de huevo
- 90 gr mantequilla tostada
- 2 gr vainilla
- 65 gr harina
- 2 gr Royal
Modo de elaboración
Poner el azúcar lustre y el polvo de almendra en el bol, añadir la miel dando vueltas con la pala. Añadir las claras, la mantequilla tostada y la harina tamizada con el Royal y la vainilla.
Dejar reposar la masa en frío durante dos horas.
Rellenar los moldes y hornear a 180°C durante 12 minutos.
Se pueden decorar de muchas maneras, te los encontrarás con chocolate, pistacho, almendra…

Preparation

Let the dough stand cold for two hours.
Fill the molds and bake at 180 ° C for 12 minutes.

Buenas noches Paula! Se pone la mantequilla al fuego, al derretirse se separan sólidos y líquidos; se deja un rato mas al fuego y se «tuesta», con cuidado de que no se queme!

Efectivamente la respuesta anterior sería correcta. La mantequilla a noisette se utiliza para la preparación de financier, hay pasteleros que la cuelan para eliminar los residuos quemados o muy tostados. Saludos

Muy buenas!!! El azúcar lustre es lo mismo que el azúcar glass o el glace! A lo mejor con este nombre que es más común sabes lo que es! El azúcar lustre se consigue al moler el azúcar normal;por lo que si no te es posible conseguirlo siempre puedes hacerlo!

Hola, vivo en USA y aunque horneo con frecuencia regularme no sigo recetas en espanol porque tengo dificultad en saber los terminos de cocina y me rindo facilmente e ignoro la receta pero en esta ocasion no pude recistir y decidi preguntar para poder hacer esta receta….Que quiere decir cuando se refiere a mantequilla tostada? Mantequilla tostada or beurre noissete is a french thecnique. You achieve It bringing to boil the butter in a medium heat. It separates in to parts. Drain the serum and keep the solid part. Let to tean It a bit without burn It and you get «la mantequilla tostada»
