Es un pastel francés que contiene almendra molida; un pastel muy suave y jugoso. En las pastelerías que guardan su nombre tradicional todavía lo podéis encontrar como “visitandine”.

Curiosa la historia de este pastel con forma de “lingotes de oro”; cuentan que un pastelero tenía su local cerca de la “bolsa de comercio” y comenzó a realizar este pastel con esta forma.


Ingredientes

  • 165 gr azúcar lustre
  • 60 gr polvo almendras
  • 15 gr miel
  • 150 gr claras de huevo
  • 90 gr mantequilla tostada
  • 2 gr vainilla
  • 65 gr harina
  • 2 gr Royal


Modo de elaboración

Poner el azúcar lustre y el polvo de almendra en el bol, añadir la miel dando vueltas con la pala. Añadir las claras, la mantequilla tostada y la harina tamizada con el Royal y la vainilla.

Dejar reposar la masa en frío durante dos horas.
Rellenar los moldes y hornear a 180°C durante 12 minutos.

Se pueden decorar de muchas maneras, te los encontrarás con chocolate, pistacho, almendra…

  • 150 gr egg whites
  • 90 gr toasted butter
  • 2 gr vanilla
  • 65 gr all purporseflour
  • 2 gr baking powdered

 

Preparation

Put the powdered sugar and the almond powder in a mixing bowl. Add the honey while the mixer is spinning with the shovel.

Put the butter in a saucepan and bring to boil. Then, you remove the whey and the fat part will acquired a brown color.Add the egg whites, the toasted butter

Add the egg whites, the toasted butterand the flour sifted with the baking powder and vanilla to the mixing bowl.

Let the dough stand cold for two hours.

Fill the molds and bake at 180 ° C for 12 minutes.
